What cooks faster in oven top or bottom rack?

Most (if not all) ovens are hotter at the top than at the bottom. Thus, if you have two baking sheets in your oven, one on a higher rack and one on a lower rack, the one on the higher rack will cook faster. Therefore, it is important not only to rotate your pans from front to back, but also from top to bottom.

What rack do you roast vegetables on?

If you have to roast veggies on two different racks, make sure you put the top rack in the upper third of the oven and the lower rack in the bottom third of the oven. This will allow the heat and air to circulate better to help get the vegetables tender and caramelized.
